Almost instant pea soup -Blender

Almost Instant Soup with a Power Blender

Looking for quick gourmet soup? The almost instant frozen green pea soup will fit the bill provided you have a power blender. I am fortunate to have both a Vitamix Explorian E320 and a MiHealthmaker blender in my kitchen and either will make this almost instant hot soup. Why almost instant? Well the nut sprinkles and the nut cream take just a little longer but make all the difference both visually and by taste. It is however a quick and easy green pea soup.

Green peas are actually not a vegetable, being part of the legume family meaning they are the seeds inside pods. Other legumes include beans, lentils and chickpeas. They are very high in nutrients and most people, especially kids love green peas.

This almost instant pea soup turns the peas into a beautiful green cream that makes an excellent first course.  The added ingredients turn it into a gourmet starter.

Nutritional Value of almost instant pea soup

Green peas have exceptionally high protein content and are also rich in polyphenol antioxidants. In addition, 170 grams of peas offers an impressive array of nutrients.

A key factor in creating and maintaining a healthy gut biome is high fibre foods. In fact, the high fibre content in green peas is a key benefit to this enjoyable legume. Protein works together with fibre to slow digestion down which promotes a feeling of fullness which makes them an excellent choice as a weight loss food.

This delicious almost instant pea soup other than a dinner starter can be flasked, hot or cold and taken out as an out of the house meal. A tasty carry-out meal will prevent you from grabbing some unhealthy take away which messes with your gut biome, feeling of satisfaction and weight control.

Almost Instant Frozen Green Pea Soup

This super easy almost instant frozen green pea soup is satisfying, and can be eaten hot or cold. I make this soup in my Vitamix or MiHealthmaker. Both can make hot soup from raw without having to use any other appliances!
Prep Time 10 minutes
Cook Time 15 minutes
Course Soup Starter

Equipment

  • Vitamix or MiHealthmaker power blender
  • A small flying pan - non stick is good!

Ingredients
  

Soup

  • 900 g of frozen peas
  • 500 ml of boiling water
  • 20 ml of coconut cream
  • Salt and pepper to taste

Spicy Nut sprinkles

  • 1 Tbsp paprika
  • 1 Tbsp coriander seeds
  • 1 Tbsp cumin seeds
  • 3 Tbsp sesame seeds
  • 30 g almonds

Nut Cream

  • 60 g of blanched almonds
  • 237 ml of hot water
  • 1/2 clove of garlic

Instructions
 

Spicy Nut sprinkles

  • Add the ingredients listed to a small flying pan, heated over a low heat.Turn the heat to medium and roast the spices and nuts until they start to change colour. Shake the pan often and be very careful that the spices and nuts do not burn. as they will spoil your soup. Place this into a coffee grinder or pestle and mortar and create a spicy nutty topping. Set aside.

Nut Cream

  • Add all the ingredients into the blender and process until smooth and creamy. Set aside.

The Soup

  • Add all the soup ingredients and blend until you have a hot smooth consistency. The Vitamix and the MiHealthmaker will heat up the soup through the power of the friction.
  • Plate the soup, place a dollop of nut cream on the soup and sprinkle with the spicy nut sprinkles

Notes

This soup is made hot in the blender so needs to be served immediately. Make sure that the soup plates have been warmed.  If you are unable to serve immediately then warm up on gentle heat before plating.

Aquafaba Chocolate Mousse

To make the Aquafaba:

Ingredients:

  • 1 cup dried chickpeas – Cooked in an Instant Pot for 15 minutes with 3 Cups of water – no soaking required (drain – the liquid is the Aquafaba – set the chickpeas aside for another use, like hummus)
  • ¼ tsp cream of tartar

Instructions:

  1. Drain your chickpeas and reserve the liquid – then you have aquafaba!
  2. Place the liquid in a large mixing bowl to whip!
  3. The trick to whipping aquafaba is using a hand mixer, or stand mixer, or food processor!   Whisking it by hand takes quite a long time and does not produce as good of a result.  The best trick is to add ¼ tsp cream of tartar, which causes the aquafaba to whip up much easier, faster, and makes the peaks firmer.

Whip your aquafaba to the desired thickness. It generally requires anything between 3-6 minutes to get to semi-firm peaks, depending on your equipment and how thick your aquafaba was to begin with. Do take your time and don’t be discouraged if it takes some time to reach stiff peaks.

Aquafaba Chocolate Mousse

A simple, delicious, three-ingredient mousse for dessert
Prep Time 12 minutes
Servings 5

Equipment

  • Food processor, hand mixer, or stand mixer
  • Double boiler How to fake a double boiler - https://youtu.be/6BQ1N40lj3U

Ingredients
  

  • c aquafaba chilled (± 300ml)
  • ½ tsp cream of tartar
  • 1⅓ c bittersweet chocolate (± 200g)

Instructions
 

  • Melt the chocolate in a double boiler over medium heat, stirring occasionally
  • Once melted, set aside and let it cool to room temperature
  • Make aquafaba (see notes above the recipe)
  • Fold the aquafaba into the chocolate mixture and portion into ramekin bowls, or cups
  • Place into the refrigerator for 4-6 hours, best if left overnight
  • Garnish as desired, and serve

Notes

The amount of Aquafaba used in this recipe is approximately liquid from 2 cans of no-salt-added chickpeas.

Creamy Hummus with a Super Blender

Creamy Hummus with a Super Blender

Creamy Hummus with a Super blender can be made with store-bought canned chickpeas or uncooked dried chickpeas that you soak and cook yourself. In this post, I will add both methods and you decide for yourself which one you prefer.

INGREDIENTS

2 cans (900 g) chickpeas, liquid reserved from 1 can

¼ cup (35 g) sesame seeds

1 Tablespoon olive oil

¼ cup (60 ml) lemon juice

1 garlic clove, peeled

1 teaspoon ground cumin

⅛ teaspoon salt

OR

1 ½ cups uncooked chickpeas

3 tablespoons aquafaba (water the which chickpeas were cooked in)

¼ cup (35 g) sesame seeds

1 Tablespoon olive oil

¼ cup (60 ml) lemon juice

1 garlic clove, peeled

1 teaspoon ground cumin

⅛ teaspoon salt

Aquafaba is an excellent egg white substitute and can be used for many vegan dishes like vegan mayonnaise, vegan meringue and so much more. So, don’t throw away the aquafaba, store it in an airtight jar in the fridge for up to a week, or freeze it for up to 3 months.

1 tablespoon of aquafaba is equal to 1 egg white.
