I love pizza a lot! So imagine my delight when I found out that this week we are making scrumptious RAW pizza for our office picnic. A completely new experience for some of our Healthmakers team members who have never had the chance to see the process of making a RAW pizza from start to finish. Being involved in the entire preparation added onto the fun and was a great way to learn how simple it is to prepare healthy nutritious pizza that tastes as good as it looks. Since I cannot share or express in words just how good this pizza was, I will share the recipe with you and you can make it at home 🙂

Scrumptious Raw Pizza

 

Ingredients

 

For the base

 

2 cups flax meal

2 medium carrots

2 garlic cloves

1/4 fennel bulb

1/2 small red onion

1/2 cup chopped tomatoes

4 jalapeno stuffed olives

1 tablespoon extra virgin oil

1 tablespoon chopped parsley

1 teaspoon salt

1 tablespoon rosemary leaves

1 teaspoon freshly ground black pepper

 

For the cheese sauce

 

1 cup cashews

2 tablespoons soy sauce

1 cup macadamia nuts

1 and 1/2 tablespoon lemon juice

 

For the topping

 

2 cups spinach leaves

1 large tomato thinly sliced

1/2 a small red onion thinly sliced

8 olives pitted and minced ( we used green olives)

1 teaspoon himalayan salt (to sprinkle as desired)

1 tablespoon crisp sage leaves (crushed)

Pinch of crushed chilli pepper flakes ( optional)

 

Directions

 

For the base

 

  1. Add all the ingredients in a Superblender, like the Vitamix and blend until it reaches a thick pulpy texture. If you are using a Vitamix, once you have all the ingredients in the jug, switch the machine one and turn the variable dial to 1, slowly increase to variable 10. Blend for 30 to 60 seconds or until desired consistency is reached. For effective blending, add the liquid ingredients first and the dry ingredients last.
  2. Remove the mixture and spread it onto the solid sheets of your Ezidri Ultra FD 1000. Using a spatula spread the mixture evenly. Place the solid sheets onto the trays and stack them on the dehydrator base. Ensure that the trays are covered with with the lid.
  3. Switch your dehydrator on and set it on 42 degrees celsius. Dehydrate for 18 – 24 hours ( depending on crispy you want your pizza base).

 

For the cheese sauce

 

  1. Add all the ingredients in a Super blender and process for 30 to 60 seconds or until it reaches a thick creamy texture.

  1. Once the estimated time has lapsed, gently peel off the pizza base from the solid sheet.
  2. Using a spatula spread the cheese sauce onto the base.
  3. Add your topping, in the following order, spinach, tomatoes, onions, olives, mushrooms.
  4. Sprinkle with chilli pepper flakes and salt (as desired, just note that this will go back into the dehydrator so do not put too much salt)
  5. Place the pizza back onto the trays and stack the trays onto the base of the Ezidri dehydrator. Ensure that the trays are covered with a lid.
  6. Dehydrate at 42 degrees for 2 hours.
  7. Your scrumptious raw pizza is now ready to be enjoyed. You can serve it with a salad. I would advise you to store any left overs, but I doubt there will be any :-).
