So when you are eating cooked food, then green beans present no problem, but what to do with them when you want to eat them raw and have a load from the garden. You could just pick them up one by one and drag them through a tasty raw humous. My internet search produced a number of yummy looking salads and some snacky dehydrated bean on a site picklemetoo.com.
I found a couple of similar recipes. One of them is partly raw and the other is completely raw. For the partly raw, topped and tailed the beans and blanch in boiling water for 3 minutes. Drain and plunge into cold water with ice in to clear the heat out of them.
Next, make a mix of oil, either olive oil or coconut oil, salt to taste and your choice of spices, garlic, and herbs. You can make them Indian style, Italian Style, whatever takes your fancy. Paint them lightly with the oil mixture, lay them out on your dehydrator tray and dehydrate for 2 hours on 55deg C. Then turn it down to 43degC. When they are crisp, store in an airtight container.
Next, I found a really tasty
Raw Green Bean Salad.
Mix together 2 cups of beans chopped or sliced with 1 cup of grated carrot and 2 tablespoons of diced leek or chopped spring or red onion.
Make a dressing with
- 1 ½ tsp grated ginger
- 2 tsp Tamari or soy sauce
- ½ tsp non-iodized salt
- ½ tsp ground coriander (dhania)
- ½ tsp ground cumin (jeera)
- ½ tsp garam masala
- ½ tsp curry powder
- 1 Tblsp Agave nectar
- 1 tsp fresh lemon or lime juice
- 2 Tblsp olive oil
Pour the dressing over the beans, carrot and onion and leave to marinate for at least an hour.
Lastly there is this Green Bean Salad with more of a herbie flavour.
- 2 cups. green beans
- 1 clove of garlic
- ½ tsp. dried rosemary
- ¼ cup fresh basil
- 1 Tblsp extra virgin olive oil
- 2 Tblsp onion
- 2 stalks celery
- 1 cup tomato
- Juice of ½ a lemon
- Bragg Liquid aminos to taste or Tamari or soy sauce (Your preference)
- Top and tail the beans. Slice lengthwise and then cut into 2.5 cm pieces.
- Chop the tomato
- Dice the celery
- Chop the basil and garlic fine
- Combine all the ingredients and leave to marinate for at least one hour.
